Lee’s Cooking Class Schedule for Spring 2013

About the Farm Classes   (Please scroll down for class listings)

A spring Saturday morning at Peaceful River Farm begins with welcome and refreshments in the Education Barn.   Each class taught by Lee Newlin utilizes their own seasonal produce focusing on delicious recipes that inspires you to nourish  your body in a satisfying way.   She shares great information about the health benefits of the different foods and techniques used in class.   An optional farm tour with Lee’s husband and owner, Larry  shows how he builds healthy soil for healthy food; employs sustainable farm techniques for keeping weeds, insects, and disease at bay; and value the importance of buying locally and sustainably to protect our environment and our health.  Afterwards, you get to pick from a broad array of just-harvested, beautiful produce and (berries when in season) to build your market CSA basket to take home and share with family and friends.  Whether you’re just beginning to improve your food choices or are far along in your journey, these workshops will give you the inspiration, the motivation, and the tools to cook healthy and stay healthy!

The regular 3 hour farm classes will include:

- sharing of Lee’s expertise in the health benefits of the different foods and cooking tips and techniques. Additionally, you’ll receive great ideas  for purchasing, storing as well as preparing a wide variety of nutrient-dense foods with fantastic recipes.

- a tasting of all of the dishes demonstrated and prepared during class as well as her delightful and refreshing herbal beverages

- all recipes and informational handouts that will be sent to you via email

-a LARGE OR SMALL (you choose) CSA share of Peaceful River Farm sustainably grown produce (a $25 value!) to take home to make your own creations! (with the exception of the Yoga workshop).  Included will be recipes explained in class that you will love for each item you select!

Classes will be limited to 25 students.  Payment in advance is required, and there are no refunds. Price per class is listed in course offerings below.  If you are unable to make it to class and your seat can be filled from the wait-list, I will gladly refund your money. If I cannot fill your seat, you can send a substitute to take your place.

May 15thMarket Primer Road trip!  We’re heading to the Carrboro Farmer’s Market to answer that burning question..”What the heck is that and how do I cook it?” You’ll learn about the fresh and wonderful offerings as we visit our fellow farmers booths and tips on how to shop savvy.   Lee will have a bag full of Peaceful River fresh produce for you along with recipes at the conclusion of our visit. No tastings with this visit.  (Lee will meet you at a designated location at the Carrboro Farmer’s Market in Carrboro, NC at 4:00 pm and end at 5:30 pm)     -$35 per person

May 16th  Kitchen Downsizing -Less is More NEW WEEKDAY CLASS!  Cooking for 1 or 2?  Lee can show you how to make easy and nutritious meals that you can whip up quick without a bunch of fuss and heavy equipment! 10am-12noon -$55 per person

June 1st THIS CLASS IS FULL. PLEASE EMAIL LEE TO BE ADDED TO WAIT LIST leecooks@att.net  The Mediterranean Kitchen –It’s all Greek (and delicious) to me!  The Mediterranean diet continues to be one of the best prescriptions for a long and healthy life.   Lee shows you every step in creating unique dishes spiced with Mediterranean and Middle Eastern influences, start to finish.  Before you can say “Opa!” you’ll be inspired to create these tasty creations in your own kitchen!  10am-1pm -$60 per person

June 15th Big Blue 4U –Blueberries have many uses other than just for desserts.  Lee will show you some clever and delicious dishes highlighting the mammoth health- building properties of this little blue giant!  10am-1pm -$60 per person

 

June 8th –A Unique Class!   Wellness Workshop – Yoga and Healthful Cooking

The number of Americans practicing yoga has exploded along with a focus on a healthy diet.  We decided to blend the two by having a Wellness Workshop of Yoga and Healthful Cooking class here at Peaceful River Farm.
